The Chinese New Year celebration at Cai Yi Xuan begins with yee sang salad with salmon and continues with a procession of beautifully crafted Chinese delicacies, including Northern and Shanghainese appetizer platters, traditional assorted seafood casserole, sautéed scallops with asparagus and wild mushroom, and braised abalone in oyster sauce with foie gras mousse-filled morel mushrooms.

Following the tradition of eating fish on Chinese New Year to symbolize abundance and prosperity, steamed red-spotted grouper in soy sauce is next, followed by crispy chicken, poached garden greens with bamboo pith in rice broth, and boiled pork dumplings in lobster soup.

The celebration is completed with delicious traditional Chinese New Year desserts, including cashew nut cream, peanut crust glutinous dumplings, and black sesame rice cake.
