1. Can you tell us about your family’s culinary heritage and how it influences your approach to cooking?

Ajaz: Our culinary journey began under the guidance of our father, Ishtiaq Qureshi, and with the support of our uncle, Ismail Qureshi, and Yameen Qureshi. We were inspired by our grandfather, Haji Ishaq Qureshi, who had the honor of cooking for Queen Elizabeth in the royal kitchens of the Nawabs. Our family’s legacy in Mughlai and Awadhi cuisine has deeply influenced our approach to cooking, instilling in us a dedication to preserving traditional flavors while also incorporating modern techniques.

Asif: Growing up in a family with such a rich culinary heritage, we were exposed to the intricacies of Mughlai and Awadhi cuisine from a young age. We learned the importance of using authentic spices and cooking methods passed down through generations. Our goal is to continue the legacy of our ancestors by showcasing the refined and elegant flavors of Indian cuisine to a global audience.
